• 1kg hard pears
  • 120g sugar
  • 1 cinnamon stick
  • 2 glasses red wine
  • 1 glass of water
  • vanilla ice cream to serve
  • almond biscuit (like amaretto biscuits to serve)


  1. Peel the pears but leave the stems on.
  2. After washing, put the pears in a casserole dish with water, sugar and cinnamon. Cover with a lid and cook over medium heat for 10 minutes.
  3. Add two glasses of wine and cook for extra 15 minutes. Remove the pears and keep cooking the wine until it gets syrupy.
  4. Serve the pears with wine syrup and a scoop of vanilla ice cream. You can sprinkle some almond biscuits on top.
