• 2 figs
  • 2 slices prosciutto ham
  • 14g walnuts
  • 20g baby rocket leaves
  • 1 tbsp olive oil
  • 3 tsp balsamic vinegar
  • 1 tsp honey
  • 1/4 cup blue cheese
  • 1/4 cup cream cheese
  • 1/2 tbsp white vinegar
  • 1/2 tbsp olive oil
  • 1/2 tbsp milk

Preheat oven to 180 degrees. Place walnuts on a baking tray and bake in the oven for 10 mins to roast.
Prepare the whipped blue cheese: place blue cheese, cream cheese, vinegar and olive oil in a bowl and mix until combined. Mix in milk until a smooth spreadable consistency is reached.
Make the dressing: add oil, balsamic vinegar and honey in a jar and whisk with a fork until combined.
Prepare the salad: cut figs into quarters. Place rocket, walnuts and prosciutto in a bowl and drizzle dressing over top. Mix to combine. Place salad mix onto a serving plate, arrange figs. Spoon whipped blue cheese on to plate.
