Ingredients
- 2 1/2 teaspoons backing powder
- 1 pinch of salt
- 1 teaspoon white sugar
- 2 large eggs (beaten)
- 30 g melted and cooled butter
- 300ml milk
- 225 g plain flour
- butter for frying
Directions
- Mix up the batter by hand in a bowl, make a well in the dry ingredients (flour, baking powder, salt and sugar), beat in eggs, melted butter and milk and transfer to a jug (will be easier to put the batter in the pan). Alternatively put all of the ingredients in a blender and blitz.
- Melt the butter in a large non stick frying pan on a medium heat and tilt the pan so the butter coats the surface.
- Spoon or pour pancake batter on the pan (for each pancake spoon 2 or 3 tablespoons) and when the upper side of the pancake is bubbling, it’s time to flip it over to cook the second side.
- Serve straight away and enjoy with your favourite topping.
