Ingredients

  • 2 1/2 teaspoons backing powder
  • 1 pinch of salt
  • 1 teaspoon white sugar
  • 2 large eggs (beaten)
  • 30 g melted and cooled butter
  • 300ml milk
  • 225 g plain flour
  • butter for frying

 

Directions

  1. Mix up the batter by hand in a bowl, make a well in the dry ingredients (flour, baking powder, salt and sugar), beat in eggs, melted butter and milk and transfer to a jug (will be easier to put the batter in the pan). Alternatively put all of the ingredients in a blender and blitz.
  2. Melt the butter in a large non stick frying pan on a medium heat and tilt the pan so the butter coats the surface.
  3. Spoon or pour pancake batter on the pan (for each pancake spoon 2 or 3 tablespoons) and when the upper side of the pancake is bubbling, it’s time to flip it over to cook the second side.
  4. Serve straight away and enjoy with your favourite topping.
