Sweetcorn & Bacon Chowder

This chunky soup makes for a delicious meal whatever the season, it is quick and simple to make and packed full of flavour. It is great made with fresh sweetcorn when in season but also just as tasty if you use tinned or frozen.

Ingredients (serves 2)

3 rashers streaky bacon , chopped 

oil 

1 small onion finely chopped 

1 large potato peeled and cut into small cubes 

350ml chicken or vegetable stock 

400ml milk 

250ml of fresh sweetcorn kernels 

2 tbsp chopped chives or parsley

 Fry the bacon in a little oil in a pan until it starts to colour then add the onion and potato and cook until the onion starts to soften. Add the stock and milk and bring to a simmer. Cook for 5 minutes or until the potato is tender, then add the sweetcorn and heat through for a further 5 minutes. Season and stir in the chives or parsley.
