Spicy Char-grilled Sweetcorn

One of the best ways to enjoy sweetcorn is simply cooked on the BBQ and slathered in butter.  This is a modern twist on an old favourite!


Preparation: 5 minutes.  Cooking: about 6-10 minutes.  This recipe is per person – just multiply it up for the number needed
  • 1 cob of corn, 
  • 1 tbsp olive oil
Herb butter:
  • 2 tbsp butter, softened
  • pinch chilli flakes
  • pinch sweet paprika
  • pinch cayenne pepper
  • pinch ground cumin
  • pinch mashed garlic (optional)
Rub the sweetcorn with the oil, with salt and pepper to taste.
Put onto a hot BBQ or chargrill pan and cook for about 6-8 minutes until browned on all sides.  Keep turning so it is evenly cooked.  
To make the herb butter, mash the butter with the spices and dot over the corn cob.  
Serve when the butter is melted.
