Smoked ham & asparagus tart

Serves 4.  Preparation 20 minutes, cooking 40 minutes


500g ready made shortcrust pastry

6 large free range eggs

300ml double cream

100g grated parmesan

2 bundles of asparagus, trimmed (approx 500g)

150g smoked ham

salt and pepper to taste



1. Preheat the oven to 190C (Gas 6)

2. Roll out the pastry and line a 9" pie tin.  Prick across the bottom with a fork.  Chill for 30 minutes

3. Remove the pastry from the fridge, line the tin with baking parchment and fill with baking beans.  Place in the hot oven for 15 minutes, or until the pastry starts to firm.  If you have a fan oven that runs hot, you may need to reduce the heat to 180C to stop the pastry from burning.

4. Cut the asparagus into 1-2" lengths, leaving the tips intact.  Roughly cut the ham into strips.

5. Beat together the eggs and cream, add the parmesan and a pinch of salt and pepper

6. Remove the parchment and beans from the pastry case and arrange the asparagus and ham pieces on the pastry.  Pour over the egg mixture.

7. Put in the oven for 20-25 minutes, or until the pastry is golden bown and the egg mixture is set.  

8. Serve warm with crusty bread and a crisp green salad.
