Pork 'n' Beans!

Pork and beans is a classic partnership, and this recipe makes a hearty and very tasty supper for very few pence.  All you need is a little bit of green leaf or a hunk of bread to mop up the juices.

Pork and Beans

Preparation: 10 minutes  Cooking: 1 hour  Serves: 4

Ingredients

  • 750g belly pork, cut into strips or bite-sized chunks
  • 1 onion, finely sliced
  • 1 clove of garlic, smashed
  • 1 tin chopped tomatoes, or passata
  • 1 tin flageolet, black-eye or butter beans
  • 1 red pepper, cut into slices
  • 1 tbsp tomato puree
  • 1/2 tsp fennel seeds, crushed
  • 1/2 tsp sweet paprika
  • 1/2 tsp ground coriander
  • salt to taste
  • squeeze of lemon juice and grated lemon zest
  • tbsp cooking oil

Method

  1. Heat the cooking oil in a large frying pan or casserole and fry the pork pieces until lightly browned.
  2. Add the onion and garlic and stir until softened, then add the peppers
  3. Add the dry spices and stir through
  4. Add the tomatoes and beans, combine through and turn the heat down to a gentle simmer for about one hour.  You may need a lid to stop the sauce from evaporating.
  5. When the meat is tender and completely cooked through, add the lemon juice and zest and salt to taste
