Cherry Compote

This easy cherry compote is lovely spooned over greek yohurt for breakfast, or over icecream for a simple pud.  Or how about with scones and cream for a Godshill cherry tea?  Mmmmm


Preparation Time: 30 minutes (stoning cherries) Cooking Time: 30 minutes



  • 1kg stoned cherries 
  • 150ml water
  • 500g jam sugar
  • Juice of half a lemon



  1. Put the cherries and water into a pan and bring to the boil then simmer for about 15 minutes until the fruit starts to soften
  2. Add the sugar and lemon juice and bring back to the boil and cook for 15 minutes
  3. The compote should be glossy and syrupy, but not thick like jam!
  4. Dob a teaspoon of compote onto a cold plate, wait 30 seconds then drag your finger across the top.  If a skin has formed, then its ready.  If not, boil for another 5 minutes and try again
  5. When its done, put the hot compote into warmed sterilised glass jars (sterilise by heating clean jars and lids in the oven)
