Brilliant Burgers!

Making the most of the best local meats doesn't mean having to use the most expensive cuts - mince is a thrifty way to get a taste of the Island, and summer is the perfect time to make the most of mince.  Burgers for a summer BBQ, or a quick supper of homemade meatballs; they both start in the same way - with great mince.

Preparartion time: 10 minutes  Cooking time: 15-20 minutes  Serves: 4  Makes 4 burgers or 8-16 meatballs

Ingredients - basic burger or meatball mix

  • 500g mince (beef, lamb, pork or a mix of pork and beef)
  • small onion very finely chopped
  • a beaten egg to bind it all together
  • The next bit is the fun bit - adding the spices!  Here are some ideas, but go for whatever takes your fancy. 

Pork and apple

To a pork mince mix add a peeled, grated cooking apple and a handful of shredded sage leaves.  For a twist, form the burger or meatballs around a nugget of mozzarella cheese - this will be gooey when you bite into it!

Chirizo burgers

To a pork mince mix, add 1 tbsp sweet smoked paprika, 2 tsp hot paprika, 2 smoked garlic cloves (very finely chopped),  1 tsp crushed fennel seeds and 1/2 tsp salt for a Spanish-style taste.

Perfect beef burger

To the basic beef mix, add 1/2 tsp salt and ground black pepper and 1 tsp chopped fresh thyme.

Spicy lamb burger

To lamb mince and finely chopped onion, add some spices for a Moroccan-inspired tasty burger. This recipe doesn't require the egg to bind as the honey and tomato do the same job.  Add a handful of ready to eat dried apricots (finely chopped), 1 tbsp tomato puree, 1 tbsp runny honey, 1 tsp flaked chillis or chilli powder, 1 garlic clove finely chopped (optional), 1 tsp ground cumin, 1 tsp ground coriander, 1 tsp ground cinnamon, handful finely chopped fresh parsley.

 

Method

  1. Mix all of the ingredients together with your hands.
  2. Form the burgers or meatballs by hand, or buy a buger press from Hursts
  3. Shallow fry, BBQ or grill until cooked through
