BBQ Sauce for Pork Ribs

Pork is one of the best meats to BBQ, and our own free-range pork is the tops.  For a really great rack of ribs, you need to use a sauce recipe from the southern states of the US, where the BBQ is an art form.  This is a classic American BBQ sauce from Tennessee - sweet, piquant and totally yummy.

Tennessee BBQ Sauce

Preparation time: 5 minmutes             Cooking time: 15 minutes              



Half tbsp vegetable oil

Half cup measure very finely chopped onion

4 cloves garlic, crushed finely

Half tsp salt

2 cups ketchup

Third cup dijon mustard

Third cup cider vinegar

Half tsp cayenne pepper

Half tsp celery salt

Third cup treacle

Third cup soft brown sugar

1 tsp chilli powder

1 tsp ground black pepper

2 tbsp Worcestershire sauce



Saute the onion, garlic and salt in the vegetable oil for 5 minutes.  Add the rest of the ingredients and simmer gently, stirring occaisionally until it forms a syrupy suace.  Season to taste.

This works as a marinade and as a basting sauce.
