Apple Pie with Cheese

Apples and cheese - a classic combination, but have you ever tried them together in a pie?  This deliciously sweet pie has a slight bite from the cheese added to the filling.  You can also make a classic apple pie with a shortcrust pastry flavoured with cheddar.  Mmmm!

Apple Pie with Cheese

Serves 4.  Preparation: 20 minutes.  Cooking: 30-40 minutes


4-5 Bramley or other large cooking apples, cored, peeled and cut into large slices

100g demerera sugar

300g shortcrust pastry

150g Wensleydale, Leicester or similar tasty cheese thinly sliced or crumbled.


1. Heat the oven to 180C

2. Put the apples in a pan with 2 tbsp water and cook very gently until they start to fluff, but remove from the heat before they go totally soft.

3. Drain off any excess liquid, stir through all but a tbsp sugar and leave to cool.

4. Grease a pie dish with butter, line with pastry and prick with a fork.

5. Spoon in the apple mix and place the cheese on top.  

6. Make a lid from the remaining pastry.  Moisten the edges of the pie and put the lid on top, crimping the edges.

7. Brush with water or milk and sprinkle over the remaining sugar.

8. Put into the over until golden brown - 20 to 30 minutes.

Serve with cream or custard.
